Ingredients
- 1 chicken breast, cut into ~2–3 cm chunks
- ½ tsp salt
- ¼ tsp black pepper
- ½ tsp garlic powder, if you have it
- ½ tsp paprika
- ¼ cup / 30 g cornstarch
- 1 egg, beaten, if available
- Oil or cooking spray
Fire sauce
- 2 tbsp sweet chilli sauce
- 1 tbsp honey
- 1 tsp soy sauce
- ¼–½ tsp red chilli flakes, depending on desired fieryness
- (½ tsp Dijon, optional)
- 1 tsp water if needed to loosen

Method
- Season the chicken and dip in the beaten egg, then coat thoroughly in cornstarch.
- Spray/drizzle lightly with oil and air-fry at 200°C for about 8–11 minutes, tossing halfway, until browned and the centre reaches 74°C.
- Meanwhile, mix the sauce ingredients. Warm briefly in a small saucepan or microwave until glossy.
- Toss the cooked chicken in the sauce immediately before serving.
