Ingredients

• 1 tbsp brown sugar
• Large pinch of flaky salt
• 2 shots espresso (36–40g)
• 40ml cold water
• Ice

Method

1. Add the brown sugar and a large pinch of flaky salt to a frothing pitcher.
2. Pull two shots of espresso directly onto the sugar and salt.
3. Stir until the sugar has completely dissolved.
4. Add equal parts cold water and froth with a milk frother for 20–30 seconds, until the coffee becomes thick, glossy and heavily aerated.
5. Fill a tall glass with ice and pour the Aerocano over, serving immediately.
