Yerushalmi Kugel

Ingredients

  • 250g fine egg noodles
  • ⅜ cup oil
  • ½ cup white sugar
  • ¼ cup brown sugar
  • 3 eggs, beaten
  • 1½ tsp black pepper
  • Salt, to taste

Method

  1. Boil the noodles in a lot of water until they're cooked.
  2. Drain, wash in cold water, drain again and transfer to a wide bowl.
  3. Heat the oil in a pan and add the sugar. Cook and stir occasionally until it forms a dark caramel.
  4. Mix the eggs with the noodles and add the salt and pepper.
  5. Add the noodles to the caramel and mix well.
  6. Oil a pot with a lid and add the noodles, cover with a circular piece of parchment paper with a diameter equal to that of the pot and place the lid on top.
  7. Bake at 90°C for 5-7 hours, until very dark.
  8. Optionally, one can add 100g of dark raisins.
