Ingredients
- (300g lamb neck bones, optional)
- 2 medium carrots, diced
- 1 medium courgette, diced
- 1 stick celery (including leaves), diced
- 300g (~¼ medium) swede, diced
- 700g (½ large) butternut squash, diced
- 1 tbsp beef or chicken stock powder
- 1 large bunch parsley
Method
- Place all of the ingredients in a pot and season with freshly ground black pepper
- Conver with water and bring to a boil on low heat.
- Turn the heat down slightly and simmer for at least two and a half hours.
