Ingredients

  • (300g lamb neck bones, optional)
  • 2 medium carrots, diced
  • 1 medium courgette, diced
  • 1 stick celery (including leaves), diced
  • 300g (~¼ medium) swede, diced
  • 700g (½ large) butternut squash, diced
  • 1 tbsp beef or chicken stock powder
  • 1 large bunch parsley

Method

  1. Place all of the ingredients in a pot and season with freshly ground black pepper
  2. Conver with water and bring to a boil on low heat.
  3. Turn the heat down slightly and simmer for at least two and a half hours.
