Vegetable Kugel

Ingredients

  • 2 medium courgettes, sliced
  • 1 large white onion, thickly sliced
  • 1 large red onion, thickly sliced
  • ½ leek, thinly sliced
  • 2 large eggs
  • Salt & pepper
  • 3 tbsp matzo meal or flour
  • ½ tsp baking powder

Method

  1. Preheat the oven to 180°C.
  2. Fry the onions and leek in olive oil until soft, about 10 minutes.
  3. Add the courgette slices, season and keep frying until lightly golden.
  4. Transfer the vegetables to a bowl and let cool.
  5. Add the flour, baking powder and beaten eggs and mix together.
  6. Transfer to a lightly oiled round 9" baking pan and bake at 180°C for about 40 minutes until golden.
