Vegetable Kugel

- 2 medium courgettes, sliced
- 1 large white onion, thickly sliced
- 1 large red onion, thickly sliced
- ½ leek, thinly sliced
- 2 large eggs
- Salt & pepper
- 3 tbsp matzo meal or flour
- ½ tsp baking powder
Method
- Preheat the oven to 180°C.
- Fry the onions and leek in olive oil until soft, about 10 minutes.
- Add the courgette slices, season and keep frying until lightly golden.
- Transfer the vegetables to a bowl and let cool.
- Add the flour, baking powder and beaten eggs and mix together.
- Transfer to a lightly oiled round 9" baking pan and bake at 180°C for about 40 minutes until golden.
