Tart Crumb Crust

Ingredients

  • 1½ cups plain flour
  • 1½ tsp baking powder
  • ¼ cup granulated sugar
  • 150g cold butter or vegan butter, cubed
  • ¾ tsp vanilla sugar
  • 3 egg yolks

Method

  1. Preheat the oven to 180°C.
  2. In a stand mixer, add the flour, baking powder, sugar and vanilla sugar.
  3. Add the cubed butter and mix until a it forms a crumbly mixture.
  4. Add the egg yolks and give it short pulses until it resembles a crumbly dough.
  5. Oil a round 24cm pie dish.
  6. Divide the crumb dough into two, and press one half into the pie dish.
  7. Spread the other half in an even layer on a baking sheet tray and bake both for about 20 minutes, until golden.
  8. Add the filling and crush the dough from the tray and sprinkle on top.
