Tart Crumb Crust
Ingredients
- 1½ cups plain flour
- 1½ tsp baking powder
- ¼ cup granulated sugar
- 150g cold butter or vegan butter, cubed
- ¾ tsp vanilla sugar
- 3 egg yolks
Method
- Preheat the oven to 180°C.
- In a stand mixer, add the flour, baking powder, sugar and vanilla sugar.
- Add the cubed butter and mix until a it forms a crumbly mixture.
- Add the egg yolks and give it short pulses until it resembles a crumbly dough.
- Oil a round 24cm pie dish.
- Divide the crumb dough into two, and press one half into the pie dish.
- Spread the other half in an even layer on a baking sheet tray and bake both for about 20 minutes, until golden.
- Add the filling and crush the dough from the tray and sprinkle on top.
