Chicken
- 455g boneless, skinless chicken breast cut into medium pieces
- ⅓ cup cornstarch (40g)
- 1 egg, beaten
- salt, to taste
- pepper, to taste
- oil, to fry
Sauce
- 1 tbsp oil
- ½ tbsp garlic, minced
- 1 bell pepper, diced
- ¼ cup cider vinegar
- ¼ cup soy sauce
- ¼ cup ketchup
- ¼ cup sugar
Method
- Season chicken with salt and pepper. Coat with cornstarch and dip in the beaten egg.
- Fry until golden, crispy and cooked through. Set aside and drain on a paper towel.
- For the sauce, in a large pan, heat the oil and fry the garlic until fragrant.
- Add the bell pepper, cider vinegar, soy sauce, ketchup and sugar and bring to a boil.
- When the sauce has thickened, add the fried chicken, tossing to coat.
- Garnish with chopped green onions or cashew nuts and serve with rice.
