Stuffed Portobello Mushrooms

Ingredients

  • 2 Portobello mushrooms, gills and stems separated
  • 100g tofu, grated
  • ½ cup stuffing mix
  • ¼ cup breadcrumbs
  • 1 egg

Method

  1. Hollow out the mushrooms and chop the gills and stems very finely.
  2. Mix in the grated tofu, breadcrumbs, stuffing and egg and divide the filling between the mushrooms.
  3. Season well and bake at 180°C for about 20 minutes until the mushrooms are tender and the filling begins to go crispy.
