Stuffed Portobello Mushrooms
Ingredients
- 2 Portobello mushrooms, gills and stems separated
- 100g tofu, grated
- ½ cup stuffing mix
- ¼ cup breadcrumbs
- 1 egg
Method
- Hollow out the mushrooms and chop the gills and stems very finely.
- Mix in the grated tofu, breadcrumbs, stuffing and egg and divide the filling between the mushrooms.
- Season well and bake at 180°C for about 20 minutes until the mushrooms are tender and the filling begins to go crispy.
