Ingredients
- 450g flour
- 10g (2½ tsp) baking powder
- ¼ cup water
- ¼ tsp salt
- 1 egg
- 200g butter or margarine, cubed
Method
- Preheat the oven to 180°C.
- Add all the ingredients to the bowl of a stand mixer with the dough hook and knead until it forms a dough.
- Form into a ball, wrap with cling film and place in the fridge for at least half an hour.
- Take ⅔ of the dough and roll it out on a floured surface to a circle with a diameter of 30cm.
- Transfer to a 24cm pie dish and press down the bottom and sides.
- Add the desired filling and smooth out.
- Roll out the remaining ⅓ to a circle of diameter 25cm and drape above the filling. Make a small hole in the centre to allow steam to escape.
- Alternately, you can roll out the remaining dough into strips for a lattice topping.
- Brush the top of the pie with a beaten egg yolk and bake at 180°C for about 35 minutes.
