Savoury Pie Crust

Ingredients

  • 450g flour
  • 10g (2½ tsp) baking powder
  • ¼ cup water
  • ¼ tsp salt
  • 1 egg
  • 200g butter or margarine, cubed

Method

  1. Preheat the oven to 180°C.
  2. Add all the ingredients to the bowl of a stand mixer with the dough hook and knead until it forms a dough.
  3. Form into a ball, wrap with cling film and place in the fridge for at least half an hour.
  4. Take ⅔ of the dough and roll it out on a floured surface to a circle with a diameter of 30cm.
  5. Transfer to a 24cm pie dish and press down the bottom and sides.
  6. Add the desired filling and smooth out.
  7. Roll out the remaining ⅓ to a circle of diameter 25cm and drape above the filling. Make a small hole in the centre to allow steam to escape.
  8. Alternately, you can roll out the remaining dough into strips for a lattice topping.
  9. Brush the top of the pie with a beaten egg yolk and bake at 180°C for about 35 minutes.
