Ingredients

  • 4 chicken legs 
  • 2 onions, largely diced
  • 2 carrots, diced
  • 1 sweet pointed red pepper, diced
  • ½ butternut squash, optional
  • (1 slices courgette, optional)
  • (6 sliced chestnut mushrooms, optional)
  • (4-6 diced red potatoes, optional)
  • 4 eggs
  • ½ tsp sugar
  • 1 tbsp paprika
  • 1 tbsp tomato puree
  • 1 tbsp chicken stock powder

Method

  1. Brown the chicken legs in a pan with some oil.
  2. Cook the onion until translucent, then add the carrots, peppers and squash and cook until somewhat softened.
  3. Add the chicken legs, then the tomato puree, stock and sugar and season.
  4. Cover with water, bring to a simmer then let cook on low for about an hour.
  5. Once almost done, crack the eggs in.
