Ingredients
- 4 chicken legs
- 2 onions, largely diced
- 2 carrots, diced
- 1 sweet pointed red pepper, diced
- ½ butternut squash, optional
- (1 slices courgette, optional)
- (6 sliced chestnut mushrooms, optional)
- (4-6 diced red potatoes, optional)
- 4 eggs
- ½ tsp sugar
- 1 tbsp paprika
- 1 tbsp tomato puree
- 1 tbsp chicken stock powder
Method
- Brown the chicken legs in a pan with some oil.
- Cook the onion until translucent, then add the carrots, peppers and squash and cook until somewhat softened.
- Add the chicken legs, then the tomato puree, stock and sugar and season.
- Cover with water, bring to a simmer then let cook on low for about an hour.
- Once almost done, crack the eggs in.
