Roast Lamb Shoulder Roll

Ingredients
- 1 lamb shoulder roll (about 500g)
- 5-8 potatoes, cut into medium pieces
- 4-6 garlic cloves, minced
- Roasting herbs: rosemary, thyme and sage or mint oil
Method
- Season the meat with salt and pepper on all sides.
- Preheat the oven to 175°C.
- Sear the meat well on all sides in a pan until well browned.
- Place the sliced onions in the roasting pan and the potatoes on top. Season with salt, pepper and garlic.
- Place the meat on top of the bed of potatoes and place the roasting herbs around it.
- Cook in the oven for about 1½ hours, until the potatoes are golden brown and tender.
- Optionally, serve with mint sauce or mint jelly.
