Roast Lamb Shoulder Roll

Ingredients

  • 1 lamb shoulder roll (about 500g)
  • 5-8 potatoes, cut into medium pieces
  • 4-6 garlic cloves, minced
  • Roasting herbs: rosemary, thyme and sage or mint oil

Method

  1. Season the meat with salt and pepper on all sides.
  2. Preheat the oven to 175°C.
  3. Sear the meat well on all sides in a pan until well browned.
  4. Place the sliced onions in the roasting pan and the potatoes on top. Season with salt, pepper and garlic.
  5. Place the meat on top of the bed of potatoes and place the roasting herbs around it.
  6. Cook in the oven for about 1½ hours, until the potatoes are golden brown and tender.
  7. Optionally, serve with mint sauce or mint jelly.
