Raspberry Mojito

Ingredients
- 25 ml simple syrup
- 25 ml fresh lime juice
- 50 ml puréed raspberry, strained
- 75 ml soda water
- Dash of cranberry juice
- Mint
- Ice
Method
- Pour simple syrup into shaker and drop in sprig of mint and 2-3 raspberries.
- Muddle and pour in fresh lime juice and then raspberry purée.
- Next, add a dash of cranberry juice.
- Fill shaker ½ with ice and shake vigorously for 10-15 seconds.
- Strain mix into highball glass and top with soda water.
- Serve on the rocks. Garnish with a sprig of fresh mint and raspberries.
