Raspberry Coulis

Ingredients

  • 250g (9oz) raspberries, fresh or frozen defrosted
  • 15-30 ml (1-2 tbsp) icing sugar
  • Optionally a dash of liqueur e.g. framboise, kirsch or cointreau

Method

  1. Cook the raspberries and icing sugar and in a pot until dissolved.
  2. Strain through a fine strainer and let cool.
