Raspberry Coulis
Ingredients
- 250g (9oz) raspberries, fresh or frozen defrosted
- 15-30 ml (1-2 tbsp) icing sugar
- Optionally a dash of liqueur e.g. framboise, kirsch or cointreau
Method
- Cook the raspberries and icing sugar and in a pot until dissolved.
- Strain through a fine strainer and let cool.
