- Pie crust
- 3 eggs
- ¾ cup sugar
- 1 tsp cinnamon
- ½ tsp ground ginger
- ½ tsp ground nutmeg
- A pinch or salt
- 200g sweetened condensed milk
- ½ cup milk
- 800g pumpkin or butternut squash puree
Method
- If using fresh puree, boil the pumpkin in water until tender.
- Preheat the oven to 180°C.
- Drain well and mash into a puree.
- Combine with the spices and whisk in the eggs one by one.
- And the regular and sweetened condensed milk and mix well until incorporated.
- Pour the filling into the pie crust and bake for 20 minutes covered with silver foil, then for 25-30 minutes uncovered, until the filling has set.
