Pumpkin Pie

Ingredients

  • Pie crust
  • 3 eggs
  • ¾ cup sugar
  • 1 tsp cinnamon
  • ½ tsp ground ginger
  • ½ tsp ground nutmeg
  • A pinch or salt
  • 200g sweetened condensed milk
  • ½ cup milk
  • 800g pumpkin or butternut squash puree

Method

  1. If using fresh puree, boil the pumpkin in water until tender.
  2. Preheat the oven to 180°C.
  3. Drain well and mash into a puree.
  4. Combine with the spices and whisk in the eggs one by one.
  5. And the regular and sweetened condensed milk and mix well until incorporated.
  6. Pour the filling into the pie crust and bake for 20 minutes covered with silver foil, then for 25-30 minutes uncovered, until the filling has set.
