Potato Latkes

Ingredients

  • 5 large potatoes
  • 2 medium onions
  • 2 medium eggs
  • 4 tbsp flour
  • 1 tsp salt
  • Oil, for frying

Method

  1. Grate the potatoes and onions and place in a strainer and squeeze out the excess water.
  2. Transfer the grated potatoes and onions to a bowl, add the eggs, flour and salt and mix well.
  3. Form the mixture into patties with a diameter of about 4cm and gently place into the hot oil, no more than four at a time.
  4. Fry until golden, then flip and repeat.
  5. Serve warm with apple sauce and/or sour cream.
