Pomegranate Strawberry Sorbet

Ingredients

  • Juice of two pomegranates plus half a cup of pomegranate juice
  • 1 cup sugar
  • 0.5 lb (225g) strawberries
  • 1 tbsp lemon juice
  • Extra pomegranate seeds for garnish

Method

  1. Combine sugar and juice in saucepan and stir until sugar completely dissolves.
  2. Process the strawberries and strain, and add to pomegranate mixture and then add lemon the juice.
  3. Freeze overnight, then blend and scoop into hemisphere mould.
  4. Let firm up overnight and serve with a sprinkle of pomegranate seeds.
