Ingredients

  • 1 swede
  • 200ml water
  • 200ml white vinegar
  • 20g salt
  • ½ tsp whole black peppercorns

Method

  1. Peel the swede, cut into ½cm slices and then cube.
  2. Bring the water, vinegar and salt to a boil.
  3. Place the swede in a jar, add the brine and peppercorns, and compress as much as possible.
  4. Set in the sun for several days.
