Pickled Mushrooms
Ingredients
- 2 baskets mushrooms
- 1 cup apple cider vinegar
- 3 tbsp balsamic vinegar
- 2 garlic cloves
- 2 bay leaves
- ¼ tsp black peppercorns
- 1 sprig thyme
- 1 tbsp salt
- 1 cup water
- ½ cup olive oil
Method
- In a medium pot, add all the ingredients except for the mushrooms, and bring to a boil. Cook for a further 10 minutes.
- Pack the mushrooms into a pickling tin and top with the pickling brine.
- Let cool, seal and refrigerate.
