Pickled Mushrooms

Ingredients

  • 2 baskets mushrooms
  • 1 cup apple cider vinegar
  • 3 tbsp balsamic vinegar
  • 2 garlic cloves
  • 2 bay leaves
  • ¼ tsp black peppercorns
  • 1 sprig thyme
  • 1 tbsp salt
  • 1 cup water
  • ½ cup olive oil

Method

  1. In a medium pot, add all the ingredients except for the mushrooms, and bring to a boil. Cook for a further 10 minutes.
  2. Pack the mushrooms into a pickling tin and top with the pickling brine.
  3. Let cool, seal and refrigerate.
