Ingredients
- One head of broccoli stems
- 2 tbsp salt, preferably kosher salt
- ½ tsp whole black peppercorns
- 1 medium size garlic clove, minced or pureed
- 1½ tbsp sherry or red wine vinegar
- 2 tbsp extra virgin olive oil
Method
- Peel the broccoli stems and cut, either crosswise into ¼ inch thick medallions, or lengthwise in ¼ inch thick slices.
- Place in a jar, add the salt, peppercorn, garlic, vinegar, and olive oil and toss together.
- Cover with water and set in the sun for several days.
