Pickled Broccoli Stems

Ingredients

  • One head of broccoli stems
  • 2 tbsp salt, preferably kosher salt
  • ½ tsp whole black peppercorns
  • 1 medium size garlic clove, minced or pureed
  • 1½ tbsp sherry or red wine vinegar
  • 2 tbsp extra virgin olive oil

Method

  1. Peel the broccoli stems and cut, either crosswise into ¼ inch thick medallions, or lengthwise in ¼ inch thick slices.
  2. Place in a jar, add the salt, peppercorn, garlic, vinegar, and olive oil and toss together.
  3. Cover with water and set in the sun for several days.
