Ingredients
- 4 salmon fillets
- 1 batch pesto (it's recommended to halve the olive oil to achieve a thicker and mor spreadable consistency)
- ¼ cup breadcrumbs
Method
- Remove the salmon skins and assemble the pesto.
- Preheat the oven to 180°C
- Season the fillets with salt and pepper and spread the pesto on top of each fillet.
- Top with breadcrumbs and bake at 180°C for about 15 minutes, until the salmon is done and the topping is golden-brown and crispy.
