Pesto Salmon

Ingredients

  • 4 salmon fillets
  • 1 batch pesto (it's recommended to halve the olive oil to achieve a thicker and mor spreadable consistency)
  • ¼ cup breadcrumbs

Method

  1. Remove the salmon skins and assemble the pesto.
  2. Preheat the oven to 180°C
  3. Season the fillets with salt and pepper and spread the pesto on top of each fillet.
  4. Top with breadcrumbs and bake at 180°C for about 15 minutes, until the salmon is done and the topping is golden-brown and crispy.
