Panko Honey Mustard Salmon

Ingredients

  • 4 salmon fillets, skin removed
  • 2 tsp garlic powder
  • 2 tsp smoked paprika
  • Salt and pepper
  • ⅜-¾ cup Panko breadcrumbs
  • Avocado oil For the sauce:
  • 2 tbsp Dijon mustard
  • 2 tbsp honey
  • 2 tbsp fresh dill or ½ tsp dried dill
  • 2 large garlic cloves, minced
  • ½ lemon, juiced

Method

  1. Season the salmon fillets with garlic powder, smoked paprika, salt and pepper.
  2. In a separate bowl, combine the Dijon mustard, honey, dill, minced garlic and lemon juice and mix well.
  3. Brush the sauce over the salmon fillets, making sure to cover the top and sides.
  4. Top with Panko breadcrumbs and press in firmly.
  5. Spray with avocado oil and air fry at 205°C for 9-10 minutes or bake in the oven for 20 minutes at 180°C.
  6. Drizzle the remaining lemon Dijon dill sauce over the salmon fillets once they’re cooked.
