Ingredients
- 2½ cups (333g) self-raising flour
- 1½ cup sugar
- 4 eggs
- ¼ cup oil
- 1 cup freshly squeezed orange juice, about 3-4 oranges
- ½ an orange, zest
Method
- Preheat the oven to 180°C.
- Separate the 4 eggs and whisk the whites, adding 1 cup sugar very gradually until it forms stiff peaks.
- Mix the yolks with half a cup sugar and the flour in a mixer with the oil, orange juice and zest until it forms a smooth batter.
- Fold the egg whites into the batter and pour into parchment paper lined loaf tins.
- Bake at 180°C for about 30 minutes, until a toothpick inserted into the centre comes out clean.
- Once cooled, dust the cake with powdered sugar or glaze with maple syrup.
