Ingredients

  • 2½ cups (333g) self-raising flour
  • 1½ cup sugar
  • 4 eggs
  • ¼ cup oil
  • 1 cup freshly squeezed orange juice, about 3-4 oranges
  • ½ an orange, zest

Method

  1. Preheat the oven to 180°C.
  2. Separate the 4 eggs and whisk the whites, adding 1 cup sugar very gradually until it forms stiff peaks.
  3. Mix the yolks with half a cup sugar and the flour in a mixer with the oil, orange juice and zest until it forms a smooth batter.
  4. Fold the egg whites into the batter and pour into parchment paper lined loaf tins.
  5. Bake at 180°C for about 30 minutes, until a toothpick inserted into the centre comes out clean.
  6. Once cooled, dust the cake with powdered sugar or glaze with maple syrup.
