Mango Lime Sorbet

Ingredients

  • 2 ripe mangoes
  • 60ml (4 tbsp) lime juice
  • 50g (2oz) icing sugar

Method

  1. Combine sugar and lime juice in saucepan and stir until sugar completely dissolves.
  2. Peel the mangoes and put the flesh in a food processor with the simple syrup and blend until smooth.
  3. Freeze overnight, then blend and scoop into hemisphere mould.
