Mango Lime Sorbet
Ingredients
- 2 ripe mangoes
- 60ml (4 tbsp) lime juice
- 50g (2oz) icing sugar
Method
- Combine sugar and lime juice in saucepan and stir until sugar completely dissolves.
- Peel the mangoes and put the flesh in a food processor with the simple syrup and blend until smooth.
- Freeze overnight, then blend and scoop into hemisphere mould.
