Ingredients
- 1 x 425g can lychees (including syrup)
- Juice of 2–3 limes (to taste)
- 50g sugar
- Zest of 1 lime
Method
- Dissolve the sugar in the lychee syrup, then add to a food processor with the lychees, lime juice and zest and blend until smooth.
- Strain if necessary and transfer to a shallow freezer-safe container.
- Freeze for a few hours, until set, using a fork to agitate and break up ice crystals every half an hour.
- Once fully frozen, let sit at room temperature for a few minutes to soften before scooping. Garnish with extra lime zest if desired.
