Ingredients

  • 400g lotus biscuits
  • 1½ tsp baking powder
  • 380ml milk, room temperature
  • 125g biscoff cookie butter spread, melted
  • Lotus biscuit crumbs

Method

  1. Preheat the oven to 170°C.
  2. Line a 8"x8" baking tin with parchment paper.
  3. Finely crush the biscuits in a blender or food processor.
  4. Pour the crushed biscuits into a bowl and mix them together with the baking powder.
  5. Add the milk and whisk until smooth.
  6. Bake for 15-20 minutes, until a toothpick comes out clean.
  7. Pour the melted cookie butter over the top and smooth it out.
  8. Sprinkle the some more lotus biscuits crumbs around the edge and leave to set.
