Ingredients
- 400g lotus biscuits
- 1½ tsp baking powder
- 380ml milk, room temperature
- 125g biscoff cookie butter spread, melted
- Lotus biscuit crumbs
Method
- Preheat the oven to 170°C.
- Line a 8"x8" baking tin with parchment paper.
- Finely crush the biscuits in a blender or food processor.
- Pour the crushed biscuits into a bowl and mix them together with the baking powder.
- Add the milk and whisk until smooth.
- Bake for 15-20 minutes, until a toothpick comes out clean.
- Pour the melted cookie butter over the top and smooth it out.
- Sprinkle the some more lotus biscuits crumbs around the edge and leave to set.
