Leek & Potato Soup
Ingredients
- 2 medium leeks, sliced
- 3 medium white potatoes, cubed
- 1 tbsp chicken stock powder
- 1 tsp tarragon
- Salt and freshly ground black pepper, to taste
Method
- Halve the leeks lengthwise and wash well.
- Place the potatoes and leeks in a saucepan with the chicken stock, tarragon, salt and pepper and cover with water.
- Bring to a boil, then reduce the heat and simmer for about 45 minutes.
- Blitz with a stick blender until smooth.
