Leek & Potato Soup

Ingredients

  • 2 medium leeks, sliced
  • 3 medium white potatoes, cubed
  • 1 tbsp chicken stock powder
  • 1 tsp tarragon
  • Salt and freshly ground black pepper, to taste

Method

  1. Halve the leeks lengthwise and wash well.
  2. Place the potatoes and leeks in a saucepan with the chicken stock, tarragon, salt and pepper and cover with water.
  3. Bring to a boil, then reduce the heat and simmer for about 45 minutes.
  4. Blitz with a stick blender until smooth.
