Lamb Stew

Ingredients

  • 300g lamb neck bones
  • 250g potatoes, diced
  • 2 small onions, sliced
  • 2 medium carrots, sliced
  • 150g swede, diced
  • 1 tbsp flour
  • 200ml lamb or beef stock
  • 2 bay leaves
  • ½ tsp dried mint

Method

  1. Season the lamb bones with salt and pepper and sear in a hot pan until well browned.
  2. Remove and place in the bowl of a slow cooker.
  3. Fry the onions until just starting to soften.
  4. Add the potatoes, carrots and fried onions to the slow cooker, add the herbs and sprinkle the flour on top.
  5. Add the stock and stir together.
  6. Cook for 6-8 hours on low, or 4½-5½ hours on high.
