Honey Mustard Roasted Brussel Sprouts

Ingredients
- 400g Brussel sprouts
- 2 medium onions, cut into medium chunks (about the same size as the sprouts)
- 2 apples, cored and cut into medium chunks
- 1 tbsp honey
- 1 tsp mustard
- 2 tbsps olive oil
- Zest of 1 lemon
- Salt and pepper, to taste
Method
- Preheat the oven to 220°C.
- Arrange the Brussel sprouts in a single layer on a baking dish and sprinkle in the apples and onions.
- Combine the honey, mustard, olive oil, zest, salt and pepper in a bowl and mix well.
- Drizzle the dressing over the sprouts and toss gently to coat.
- Roast in the preheated oven until sprouts are hot and fragrant, about 30 minutes.
