Honey Mustard Roasted Brussel Sprouts

  • 400g Brussel sprouts
  • 2 medium onions, cut into medium chunks (about the same size as the sprouts)
  • 2 apples, cored and cut into medium chunks
  • 1 tbsp honey
  • 1 tsp mustard
  • 2 tbsps olive oil
  • Zest of 1 lemon
  • Salt and pepper, to taste

Method

  1. Preheat the oven to 220°C.
  2. Arrange the Brussel sprouts in a single layer on a baking dish and sprinkle in the apples and onions.
  3. Combine the honey, mustard, olive oil, zest, salt and pepper in a bowl and mix well.
  4. Drizzle the dressing over the sprouts and toss gently to coat.
  5. Roast in the preheated oven until sprouts are hot and fragrant, about 30 minutes.
