Creamed Spinach

Ingredients

  • 1 tbsp unsalted plant butter
  • 1 tsp minced garlic
  • 225g fresh spinach
  • 1 tsp cornstarch
  • 25ml heavy plant cream
  • ½ tsp kosher salt
  • pinch of black pepper

Method

  1. In a large skillet with a lid, melt the butter on medium heat. Add in the minced garlic and cook for 1 minute. Reduce the heat to low and add the fresh spinach. Place the lid on the skillet and cook for 5 minutes.
  2. While the spinach wilts create a slurry by mixing together the heavy cream and cornstarch.
  3. Once the spinach has wilted add the cream mixture. Mix well and season with salt and pepper.
