Cowboy Butter Potatoes

  • 675g red baby potatoes, halved
  • 1 tsp fresh minced parsley
  • salt and pepper, to taste
Cowboy butter
  • 4 tbsp (½ stick) unsalted plant butter, melted
  • (¼ finely minced shallot, optional)
  • 1 clove garlic, minced (or ¼ tsp garlic powder)
  • 1 tsp Dijon mustard
  • 1 tbsp fresh squeezed lemon juice
  • 1 tbsp chopped fresh parsley (or 1 tsp dried)
  • ½ tsp paprika (or smoked paprika)
  • ¼ tsp crushed red pepper flakes (optional, adjust to heat level)
  • salt & black pepper, to taste (about ¼ tsp each)

Method

  1. To make the cowboy butter: in a small bowl, stir together the melted plant butter, minced garlic, shallot, mustard, lemon juice, parsley, paprika, red pepper flakes and salt & black pepper.
  2. Preheat oven to 220°C.
  3. Add the halved baby potatoes to the bottom of a 9×13” or similar sized baking dish. Season with salt and pepper, to taste, and pour the melted cowboy butter over the potatoes and toss to coat.
  4. Bake in the oven for 35-45 minutes, tossing halfway through, until the potatoes are cooked through with crispy edges.
  5. Sprinkle with 1 teaspoon fresh minced parsley to serve.
