¼ tsp crushed red pepper flakes (optional, adjust to heat level)
salt & black pepper, to taste (about ¼ tsp each)
Method
To make the cowboy butter: in a small bowl, stir together the melted plant butter, minced garlic, shallot, mustard, lemon juice, parsley, paprika, red pepper flakes and salt & black pepper.
Preheat oven to 220°C.
Add the halved baby potatoes to the bottom of a 9×13” or similar sized baking dish. Season with salt and pepper, to taste, and pour the melted cowboy butter over the potatoes and toss to coat.
Bake in the oven for 35-45 minutes, tossing halfway through, until the potatoes are cooked through with crispy edges.
Sprinkle with 1 teaspoon fresh minced parsley to serve.
