Ingredients

  • 5 eggs
  • 2 cups sugar
  • 2 tsp vanilla sugar
  • 1 cup oil
  • ¼ cup milk or oat milk
  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 3 tbsp premium instant coffee granules, dissolved in a little hot water
  • (1½-2 tbsp coffee or chocolate liquor, optional)

Method

  1. Preheat the oven to 180°C.
  2. Whisk the eggs and sugar for 5-10 minutes (until light and foamy), adding the sugar gradually.
  3. Mix the rest of the ingredients, except the coffee, in a separate bowl until it forms a smooth batter.
  4. Mix in the coffee and then fold in the whisked eggs.
  5. Bake for about 40 minutes at 180°C.
