Ingredients
- 5 eggs
- 2 cups sugar
- 2 tsp vanilla sugar
- 1 cup oil
- ¼ cup milk or oat milk
- 2 cups all-purpose flour
- 2 tsp baking powder
- 3 tbsp premium instant coffee granules, dissolved in a little hot water
- (1½-2 tbsp coffee or chocolate liquor, optional)
Method
- Preheat the oven to 180°C.
- Whisk the eggs and sugar for 5-10 minutes (until light and foamy), adding the sugar gradually.
- Mix the rest of the ingredients, except the coffee, in a separate bowl until it forms a smooth batter.
- Mix in the coffee and then fold in the whisked eggs.
- Bake for about 40 minutes at 180°C.
