Ingredients
- 1 cup self-raising flour
- Alternatively:
- 1 cup plain/all-purpose flour
- 1½ tsp baking powder
- ¼ tsp salt
- ½ cup oil
- 1 cup sugar
- 1 cup drinking chocolate powder
- 1 tbsp cocoa powder
- 5 eggs
- (2 tbsp chocolate or coffee liqueur, optional)
Method
- Preheat oven to 180°C.
- Whisk the eggs with the sugar, adding gradually, for about 10 minutes until light and foamy.
- Mix the other dry ingredients in another bowl, then add to the egg and sugar mixture in stages and fold through.
- Finally, add the oil and liqueur, if using, and keep folding until the batter is well incorporated.
- Pour into two loaf pans, or one large tray pan and bake at 180°C for about 30-35 minutes, until a toothpick inserted into the centre comes out clean.
- Can be topped with chocolate ganache.
