Ingredients

  • 1 cup self-raising flour
    • Alternatively:
    • 1 cup plain/all-purpose flour
    • 1½ tsp baking powder
    • ¼ tsp salt 
  • ½ cup oil
  • 1 cup sugar 
  • 1 cup drinking chocolate powder
  • 1 tbsp cocoa powder 
  • 5 eggs
  • (2 tbsp chocolate or coffee liqueur, optional)

Method

  1. Preheat oven to 180°C.
  2. Whisk the eggs with the sugar, adding gradually, for about 10 minutes until light and foamy.
  3. Mix the other dry ingredients in another bowl, then add to the egg and sugar mixture in stages and fold through.
  4. Finally, add the oil and liqueur, if using, and keep folding until the batter is well incorporated.
  5. Pour into two loaf pans, or one large tray pan and bake at 180°C for about 30-35 minutes, until a toothpick inserted into the centre comes out clean.
  6. Can be topped with chocolate ganache.
