Chicken Stroganoff

Ingredients

  • 1 kg chicken
  • 350g mushrooms, sliced
  • 1 medium onion, diced
  • 6 garlic cloves
  • 2 tsp Dijon mustard
  • 1 tsp oregano, chopped
  • 250ml chicken stock
  • 125ml vegan cream
  • ½ tsp salt
  • ¼ tsp ground black pepper
  • 2 bay leaves
  • Handful of chopped parsely

Method

  1. In a slow cooker, add the onion, garlic, mushrooms, Dijon mustard, oregano, and chicken stock. Next, add the chicken and cook on low for 6 hours.
  2. Stir in the cream and chopped parsley.
  3. Make a slurry with 3 tablespoons of corn starch and 3 tablespoons of water and mix in to thicken.
  4. Turn up to high and cook a further 30 minutes.
