Chicken Stroganoff

Ingredients
- 1 kg chicken
- 350g mushrooms, sliced
- 1 medium onion, diced
- 6 garlic cloves
- 2 tsp Dijon mustard
- 1 tsp oregano, chopped
- 250ml chicken stock
- 125ml vegan cream
- ½ tsp salt
- ¼ tsp ground black pepper
- 2 bay leaves
- Handful of chopped parsely
Method
- In a slow cooker, add the onion, garlic, mushrooms, Dijon mustard, oregano, and chicken stock. Next, add the chicken and cook on low for 6 hours.
- Stir in the cream and chopped parsley.
- Make a slurry with 3 tablespoons of corn starch and 3 tablespoons of water and mix in to thicken.
- Turn up to high and cook a further 30 minutes.
