Chershi Pumpkin Spread

Ingredients

  • 1kg pumpkin, cubed
  • 12 garlic cloves
  • 1 heaped tsp sweet paprika
  • 1 tsp hot paprika
  • Lemon juice, olive oil and salt, to taste

Method

  1. Add the cubed pumpkin to a pot of salted water.
  2. Cook the pumpkin for about half an hour, until soft.
  3. Meanwhile, roast the garlic in the oven at 180°C until golden and soft.
  4. Strain and transfer to a bowl and mash.
  5. Add the spices, lemon juice, oil, salt and garlic and mix well.
