Chershi Pumpkin Spread
Ingredients
- 1kg pumpkin, cubed
- 12 garlic cloves
- 1 heaped tsp sweet paprika
- 1 tsp hot paprika
- Lemon juice, olive oil and salt, to taste
Method
- Add the cubed pumpkin to a pot of salted water.
- Cook the pumpkin for about half an hour, until soft.
- Meanwhile, roast the garlic in the oven at 180°C until golden and soft.
- Strain and transfer to a bowl and mash.
- Add the spices, lemon juice, oil, salt and garlic and mix well.
