Blooming Onion

Ingredients

  • 1 large onion
  • 2 tbsp flour
  • 1 tsp crushed garlic
  • 1 tsp dried red chilli flakes
  • 1 tsp smoked paprika
  • 1 tsp grill seasoning
  • 1 tsp turmeric
  • 1 tsp salt
  • ½ tsp ground black pepper
  • 1 large egg
  • ¼ cup oat milk
  • Oil, for deep frying

Method

  1. Cut off the top of the onion (not the core with the hairs) and peel only the outermost peel, making sure to keep the core intact.
  2. Place the onion core side up on a cutting board and carefully use a sharp knife to make 4 deep lengthwise cuts, thereby quartering the onion. Begin the cuts a little after the core so it stays intact and the onion stays together.
  3. Make 4 more cuts between the existing 4 such that the onion is now cut into eighths.
  4. Repeat with each eighth so that the onion is now divided into sixteen.
  5. Turn the onion right side up and carefully open it up to reveal the petals.
  6. In a bowl, mix the flour, garlic and the spices.
  7. In a separate bowl mix the oat milk with the beaten egg.
  8. Gently place the onion in a wide bowl and carefully sprinkle over 2-3 tablespoons of the flour mixture. Carefully open the petals and ensure the flour adheres to the insides.
  9. Pour the egg mixture onto the onion and ensure it reaches between the petals.
  10. Sprinkle over the rest of the flour mixture and repeat the process of ensuring it adheres to the insides and outsides of the petals.
  11. Heat the oil for deep frying to 170-190°C and with the help of a slotted spoon carefully lower the onion into the oil and fry until golden, about 4-5 minutes.
  12. Remove and drain on a plate lined with paper towels.
  13. Serve hot with dips, sauces and/or sour cream.
