Beef Stroganoff
Ingredients
- 500g beef of choice, diced1
- 4 tbsp olive oil
- 1 medium onion
- ½ tsp salt
- ¼ tsp ground black pepper
- 2 boxes mushrooms, sliced
- ½ cup boiling water
- 1 cup vegan cream
- ½ tbsp beef stock powder
- 1 tsp baking soda
- 1 bay leaf
- Handful of chopped parsely
Method
- Dissolve 1 tsp of baking soda in 2 tbsps of water and toss the diced beef in the solution, ensuring all pieces are coated.
- Let it sit for 15-20 minutes at room temperature.
- Rinse the beef thoroughly under cold water to remove the baking soda.
- Pat the beef dry with paper towels before cooking.
- Add half of the oil into a saucepan, add the meat and brown well.
- Season with salt and pepper, remove to a plate and set aside.
- Add the rest of the oil and the onions and fry until golden.
- Add the mushrooms, put on the lid and fry for another 5-6 minutes.
- Add the boiling water, beef stock, bay leaf and the salt and pepper, replace the lid and cook for another 8 minutes.
- Add the meat and vegan cream, mix and replace the lid and cook for at least another 30 minutes, until the meat is soft.
