Beef Stroganoff

Ingredients

  • 500g beef of choice, diced1
  • 4 tbsp olive oil
  • 1 medium onion
  • ½ tsp salt
  • ¼ tsp ground black pepper
  • 2 boxes mushrooms, sliced
  • ½ cup boiling water
  • 1 cup vegan cream
  • ½ tbsp beef stock powder
  • 1 tsp baking soda
  • 1 bay leaf
  • Handful of chopped parsely

Method

  1. Dissolve 1 tsp of baking soda in 2 tbsps of water and toss the diced beef in the solution, ensuring all pieces are coated.
  2. Let it sit for 15-20 minutes at room temperature.
  3. Rinse the beef thoroughly under cold water to remove the baking soda.
  4. Pat the beef dry with paper towels before cooking.
  5. Add half of the oil into a saucepan, add the meat and brown well.
  6. Season with salt and pepper, remove to a plate and set aside.
  7. Add the rest of the oil and the onions and fry until golden.
  8. Add the mushrooms, put on the lid and fry for another 5-6 minutes.
  9. Add the boiling water, beef stock, bay leaf and the salt and pepper, replace the lid and cook for another 8 minutes.
  10. Add the meat and vegan cream, mix and replace the lid and cook for at least another 30 minutes, until the meat is soft.
