Ingredients

  • 1 cups petite beurre or digestive biscuits, crushed
  • 75g butter, melted
  • 500g cream cheese (30%)
  • 3 eggs
  • 25g (~1 tbsp) flour b
  • ½ cup sugar

Method

  1. Preheat the oven to 200°C.
  2. Crush the biscuits and mix with the melted butter until it forms fine crumbs.
  3. Line and oil a 10cm tin with parchment paper.
  4. Press the biscuits into the tin to form the base.
  5. Add the sugar and cheese to a stand mixer with the beater blade and beat on low speed. Gradually add the eggs and the the flour.
  6. Pour the batter in to the tin onto the base and bake for 10 minutes at 200°C.
  7. Turn the oven done to 160°C and bake an additional 60 minutes.
  8. Let cool and refrigerate.
