Ingredients
- 1 cups petite beurre or digestive biscuits, crushed
- 75g butter, melted
- 500g cream cheese (30%)
- 3 eggs
- 25g (~1 tbsp) flour b
- ½ cup sugar
Method
- Preheat the oven to 200°C.
- Crush the biscuits and mix with the melted butter until it forms fine crumbs.
- Line and oil a 10cm tin with parchment paper.
- Press the biscuits into the tin to form the base.
- Add the sugar and cheese to a stand mixer with the beater blade and beat on low speed. Gradually add the eggs and the the flour.
- Pour the batter in to the tin onto the base and bake for 10 minutes at 200°C.
- Turn the oven done to 160°C and bake an additional 60 minutes.
- Let cool and refrigerate.
